Bearing Witness At A Mink Farm

It takes as many as 60 minks to make one full-length fur coat. They are bred and imprisoned in tiny cramped cages in large, dank warehouses. Although they can hear each other, they are each isolated in their tiny cage so as not to taint their fur. They never get love or touch or company. Just maddening isolation.   Eventually their misery will be over after enduring one of the most violent deaths by gassing, so Read more…

Crispy, Smoky ‘Bacon’, Avo, Cheese, and Tomato, Grilled Sandwich

There’s nothing sexier than a killer grilled sandwich that didn’t have to be murdered in order to be devoured with gusto and wild abandon. This is The Sandwich That Will Get You To Be A Believer! It’s mouthwatering and so easy to make.  I made it up as I went and it was a bit risky but it really, really worked out and I’ve made it several times since and it just keeps getting better. Run, don’t Read more…

Bearing Witness At A Pig Slaughterhouse

This particular slaughterhouse kills almost 7,000 pigs every day, which is about average given that some U.S. slaughterhouses are at about 11,ooo. It’s staggering. And even moreso once you are looking into their kind, innocent, and helpless eyes, knowing these are there last few moments alive before meeting a gruesome death after having lived a miserable life. It changes you.  In cities all around the world, people from all walks of life are coming Read more…

Kiwi Smoothie

When your neighbors have a surplus of kiwis in the backyard, you get busy. I cleaned out an old ice tray, filled each square with a scooped out kiwi and put them in the freezer. The result was a super duper delish, takes-two-minutes-to-make smoothie! Ingredients – one smoothie (double or triple, etc. for more portions): 1 frozen banana cut up in chunks  3-4  frozen kiwi cubes 1 generous tsp almond butter 3/4  cup almond milk Read more…

Roasted Brussel Sprouts in Balsamic Glaze with Shallots and Pecans

There’s no other way to put it – these babies are mind-blowing. And so easy to make! I’m not great with measuring so these measurements (and most all of my recipe measurements) are approximations. Play with it and once you make any of these, you’ll get the hang of it and find how you like it. Pre-heat oven to 400. In about 2 glugs of olive oil, saute (or caramelize) 2 very large shallots (or Read more…

Roasted Portabello Sliders

This one’s lightly slathered with chipotle Veganaise on baked (Panini) mini rolls. You could also melt a slice of Chao cheese, but it was so good, I didn’t bother. On a scale of 1-10, it’s an 11. Other ideas: with mashed avocado, grilled (or caramelized) onions, slices of tomato, pickle, and lettuce. Great for NYE parties or football night. They’re so dang good you’ll want to make any excuse to cook them up. Pre-heat oven to Read more…

Christmas Holiday Dinner

My first all vegan Christmas dinner was, charmingly enough, with wonderful vegan friends at their home in Cambridge, England in December 2015. I had begun to go veg just prior to my holiday visit, but hadn’t yet made the full transition to vegan. I had given up all meat, poultry, and fish in October and November and was still learning about dairy and why it was also just as cruel to use animals for their Read more…

Quick n’ dirty & yummy

I whipped this baby up while listening to vegan animal rights activist vids. Quick sauté medium red onion in 1 Tbsp olive oil over med flame. Scrape cooked onions to one side of the pan when slightly softened and add a few strips of Beyond Meat grilled chick’n strips over the heated part and take out of pan after crisping up each side. Add mushroom and season – I used Trader Joe’s everyday season + Read more…
