Cut up, toss, and pour a bunch of fresh, raw veggies and quinoa in the crockpot before noon and you have your early Sunday dinner by 6. 

Ingredients

Hearty sweet potato, black beans, veggies, and quinoa chili

3 cups sweet potato, diced
1 cup diced red onion
1 large bell pepper
1 zucchini or green beans
3 cloves minced garlic
1 can black beans
1 can fire-roasted tomatoes
1 can corn
3 cups veggie broth
2 Tbsp tomato paste
2/3 cup uncooked quinoa
1 1/4 Tbsp chile powder (or 1 finely minced jalapeno pepper)
2 tsp cumin
2 tsp paprika
1 tsp coriander
Sea salt as needed

Instructions

Chop all veggies into diced size pieces as shown, put all ingredients in the crockpot and stir until all mixed together. Put the crockpot on low and before noon and you have your early Sunday dinner by 6.
Slow cook on high for 4-6 hours.
