Scrambled my first cheezy omelette since going vegan using Just Egg (it’s made of mung bean) and it  was SO GOOD. As a former “I love eggs!” kind of a person, I am more than happy making my tofu scrambles (I’ve never met a tofu scramble I didn’t love), but I had this Just Egg and so figured I’d try is since so many of my friends swear by it. Now I kn0w why. It’s major. 🙂 

I used Violife shredded cheddar. Sautéed onions, broccoli, and mushrooms, added egg and scrambled. Salt and pepper. You can use Black Salt instead of sea salt if you want an even eggier (sulphur) smell and taste. 

Of course, I buttered my toasted bagel with Miyoko’s butter.  ZERO cholesterol for the whole shebang.
