There’s nothing sexier than a killer grilled sandwich that didn’t have to be murdered in order to be devoured with gusto and wild abandon. This is The Sandwich That Will Get You To Be A Believer! It’s mouthwatering and so easy to make. 

I made it up as I went and it was a bit risky but it really, really worked out and I’ve made it several times since and it just keeps getting better. Run, don’t walk with this one!

Cheese, tempeh ‘bacon’, avocado, and vine-ripened tomato with chipotle Veganaise. I could eat two of these and then a third.
RECIPE:

Three minute marinade for tempeh: tamari, olive oil, liquid smoke, TJ’s everyday seasoning, garlic powder.

Cut tempeh in slices, marinade 3 minutes when that’s all you have  , saute in pan on med high heat til both sides are crispy, scoot aside in pan. Grill two slices of fave bread in light Miyoko’s Kitchen butter (my fave!!).

Meanwhile, off to the side in pan, grill slices of (heirloom) tomato initially because you want to soften the slices but they accidentally turn into amazing tomato slice puree.

Compile sandwich with two slices of Chao Cheese, cover to melt and meld, put on plate and slather on Chipotle Veganaise, pile on some sliced avocado, compress, and enter sandwich heaven.

This all took just a few minutes. You can, of course, do a million variations of this that should last a lifetime.
