This one’s lightly slathered with chipotle Veganaise on baked (Panini) mini rolls. You could also melt a slice of Chao cheese, but it was so good, I didn’t bother. On a scale of 1-10, it’s an 11.
Other ideas: with mashed avocado, grilled (or caramelized) onions, slices of tomato, pickle, and lettuce.
Great for NYE parties or football night. They’re so dang good you’ll want to make any excuse to cook them up.
Pre-heat oven to 400 degrees. Place the Portobellos in a roasting dish,
brush both sides with olive oil, place ‘open-faced’ in dish, sprinkle 4 cloves minced garlic, 1 tsp each of crushed or minced thyme & rosemary, add salt & pepper to taste. Roast for about 20-25 minutes. Check on them at 15 min.
Now they’re packed with flavor and ready to go. Use whatever kind of roll you want. I got 1/2 baked panini rolls from Trader Joe’s and it was divine. With these burgers, I prefer a crunchy roll or baguette to counter the softness of the Portobellos.
